No Zen, Cookies instead!!

10oz plain flour
½ teaspoon bicarbonate of soda
1 teaspoon salt
6oz unsalted butter, melted and cooled slightly
7.5oz dark brown sugar
4oz granulated white sugar
1 tablespoon vanilla extract
1 large egg
1 large egg yolk
300g milk chocolate chips or raisins or half of each! (optional)

In a bowl put together flour, bicarbonate of soda and salt.
In a pan on the stove, melt the butter slowly, then add the brown sugar, sugar and vanilla. mix well.

Add egg, then the yolk. Beat well to ensure that egg is evenly distributed.

Pour this mixture (tastes yummy at this stage too!) in the bowl of flour then fold in chocolate chips / raisins.

Put this in the fridge for 30 minutes and pace… (sorry wait patiently!!)

Preheat the oven to Gas Mark 5.

Spoon a small lump into your hand and mould to a ball.

Drop onto a greased baking sheet and flatten. Make sure they are far apart. For large cookies make bigger balls! Simple.

(Don’t try to make one big cookie, unless you enjoy eating cookie mixture out of the oven, it will go everywhere)

Bake for approximately 10-15 minutes only until the edges begin to turn golden. (They’ll look and feel underdone but they’re ready.)

Remove from the oven and don’t touch!! Just leave on the side on the tray for a minute. The top will crust over a little.
Now scoop off with a wide spatula and flip over on the to crusted top onto a wire cooling rack…

    Slowly, but surely, term is creeping upon us! I have been going to morning prayer, just to get myself in the ‘mood’ for doing organised religion you understand. I think I have managed about 6 of them, well ok I was late for two so do two halves make a whole? I even had a whole conversation about music for evensong! You might get the impression that I am not that overjoyed at returning to college. Some things I am looking forward to… Some not! After yesterdays entry, I think should really be quite chuffed that I didn’t look part of the Cathedral scene, I do try as hard as possible not to fit in!!
